Big Bacon Sandwich
I consume about a pound of bacon a week. Most of it gets turned into these bacon sandwiches. So I thought this would make a good first post for my blog.
First thing you do is cook the bacon. Once the bacons done, set it aside with your bun and spinach.
I pour off the bacon grease into a little bowl. Clean the bacon grits out of the fry pan, and then use the grease to cook the eggs and peppers in.
The jalapenos get fried in the bacon grease along with the egg. I do the eggs over easy to seal in some runny yoke. Once the eggs are almost done, I add some cheese and melt it on the egg.
The fried jalapenos give the sandwich a nice kick.
So when the egg is done, scoop it up with the cheese and peppers, and plop it down on the spinach side of the bun.
Put it together and enjoy!
