BBQ Bacon and Eggs
I wanted to make another bacon sandwich, but I was all out of bread or buns. So I just decided to have bacon and eggs by themselves.

First things first, get the bacon cooking. For bbq bacon you’ll want to cook out most of the fat before adding the bbq sauce.

By the way, Mason jars make great beer mugs! This night I was drinking Kilkenny.

Once most of the fat is cooked out, I drain it off into a container and put it aside. Now it’s time to add the barbecue sauce. I’m using Bull’s-Eye, Blazin’ Chipotle.

So cook the bacon in the barbecue sauce and let it caramelise a bit.

Now it’s time to do the eggs! I move the bacon to the plate and clean the bits out of the pan. Then I add the bacon grease back in so that the eggs don’t stick. Crack a few eggs in there and top with cayenne pepper and some fresh sliced jalapenos.

I’m doing these eggs over easy, so midway through the cooking you gotta flip em over.

Serve it up and enjoy.
